Welbilt brand Convotherm has launched the maxx range of combi ovens, designed to allow professional chefs to run a successful and simplified foodservice operation.
The Convotherm maxx is reportedly the result of many years of learnings and experience at the manufacturer. The range utilises advanced technologies in order to help chefs obtain optimal results.
These include a new 7-inch TFT HiRes glass touchscreen display with a scroll feature and pictograms, designed to be as easy and intuitive to operate as a smartphone.
The hygienic handles are made of antibacterial and antimocrobial plastics to reduce the multiplication of microorganisms.
While energy efficient triple glass is designed to minimise heat loss, which could lower energy consumption levels as well as enable a high level of safety and environmental friendliness.
The Convotherm maxx is available as a 6.10 or 10.10 and offers a greater capacity due to an additional shelf. This should ensure greater efficiency and speed thanks to optimal capacity utilisation.
Plus a powerful, long life LED light strip is integrated into the appliance door and lights the interior.
The combi oven series also features climate management, a Self ClimateControl system, which should enable every type of baked good or cooked food to be given the correct amount of moisture. If crispy crusts are also required, the maxx’s Crisp&Tasty setting provides precisely metered hot air that removes moisture in order to ensure results.
Other intelligent production management features include Press&Go, TrayView and TrayTimer, enabling an operator to select a fully automatic or manual mode, with either single or mixed loads.
The unit’s Wi-Fi and LAN interfaces mean software updates or recipes can be uploaded centrally to several appliances whilst HACCP data can easily be retrieved.
The Convotherm maxx offers refined sensor technology and airflow management, as well as an intelligent, individually programmable interaction of steam, hot air and time to ensure optimal consistent quality. With the three-level BakePro baking function, users can obtain a uniform cooking chamber climate for all baked products: pre-prooved fresh, pre-prooved frozen or parbaked. Frozen baked goods should not need to be warmed or thawed as BakePro in the Convotherm maxx is designed to ensure optimal rising, elasticity of the crumb and sheen.
The combi oven is equipped with ConvoClean: a fully automatic cleaning system, designed to be simple, reliable and environmentally friendly that is certified for un-attended operation. In addition, the HygieniCare package is said to provide an extra plus for hygiene in the professional kitchen.
